Our Story

Edilillie, pronounced Edi – Lily, is Aboriginal for two hills and a water source, and is the name of a small country town in South Australia. The vineyard is located in the hamlet of Sevenhill in the Clare Valley.

Edilillie Wines emphasis is to over deliver in expectation.

We select the best rows, hand pick, foot crush, ferment in 4 styles, in one tonne fermenters, basket pressed, with little preservative or additives and use older seasoned oak for less wood influence. Our wines are bright with longer elegant flavours on the palate.

The 20-acre vineyard was established in 1982 and has an easterly aspect, giving morning sunshine and escaping the hot afternoons allowing longer ripening time.

Grape grower David cook lives on the vineyard and has been growing for 24 years. Winemaker Michael Corbett and assistant cellar hand Cooky ensure the best fruit is selected, walking the rows and picking at optimum times in small batches. The wine is made at Knapsteins winery in Clare. A total of 1000 cases are produced per annum.

2016 vintage was an exceptional vintage, with near perfect growing conditions.

The wines drink well now and all have long cellaring potential.

Meet Cooky

Edilillie is owned and operated by the Cook family. David Cook has been a grower in the Clare Valley for 24 years, since planting a vineyard and establishing in 1998. Growing premium grapes for local wineries such as Kilikanoon, Mitchells, Taylors, Paulette’s, Knapstein, Claymore and Vanguardist, and making wine since 2014. David was a Publican for 17 years prior to this – at the Maid and Magpie, Bentleys Hotel and General Havelock Hotel in Adelaide.

Meet Lizey

Eliza is David's daughter, and the apple does not fall far from the tree as she is also very passionate about Edilillie Wines. A combination of growing up in the Clare Valley, surrounded by well-known vineyards and some of Australia's most successful wineries, paired with her degree in Business and Marketing provided Eliza with various tools and opportunities to gain expertise in the wine industry.
